Here you'll find a description of celiac disease and lactose intolerance with suitable and unsuitable products.

Celiac disease

Celiac disease is an intolerance to gluten (elastic protein substance). In case of genetic predisposition, gluten damages the mucous membrane of the small intestine. This damage leads to a reduction of intestinal villi, which again reduces the surface of the intestine resulting in a chronic inflammation of the small intestine. The effects can differ from person to person. Mostly, the symptoms are nausea, vomiting, diarrhoea, stomach pains, and due to the reduced uptake of nutrients also fatigue and weight loss, as well as anemia and bone atrophy. In children, celiac disease can also result in growth disturbances. Unlike with lactose intolerance, there is no tolerance threshold for people suffering from celiac disease, which requires strictly gluten-free nutrition!

Lactose intolerance

Lactose intolerance (not to be mistaken with the allergy against the cow milk protein) is caused by a reduced or lacking production of a digestive enzyme (lactase) in the small intestine with the result that milk sugar (lactose) cannot be digested or only digested to a certain extent. The undigested milk sugar enters the large intestine where it is fermented resulting in the production of gas. The complaints strongly vary from person to person. The intolerance can lead to bloatedness, vomiting, stomach pains & cramps, diarrhoea and nausea.

The following products contain lactose:

  • All types of animal milk (cow, sheep, goat, mare...)
  • Butter milk, whey, yoghurt, fresh cheese, curd cheese
  • Mozzarella
  • Processed cheese
  • Cream, sour cream, coffee cream
  • Rivella
  • Preparations & products of the above mentioned food (glacé)

The following products are free of lactose:

Vegetables, salads, herbs, fruits, potatoes, sweet chestnuts, legumes, corn, fish, meat, eggs, Tofu, oil, peanuts & kernel, fats, boiled butter, sweeteners, pure spices (like pepper, paprika), hard cheese and semi-hard cheese (every cheese ready for consumption). The personal tolerance of each person has to be considered.
